Mini Cheesecakes

Ingredients – Crust

  • 2 cup graham crackers
  • 4 tablespoons sugar
  • 1/4 teaspoon vanilla
  • 6 tablespoons melted butter

Ingredients – Cheesecake

  • 6 ounces softened cream cheese
  • 2 eggs
  • 1/2 cup sugar
  • 1/4 teaspoon vanilla
  • 1/2 cup heavy cream


  • Preheat the oven to 325 degrees F.
  • Line muffin pan with nine cupcake liners.
  • Pulse graham crackers, vanilla, sugar, and melted butter in a food processor until combined.
  • Add the prepared crust to the cupcake liners.
  • Beat cream cheese with eggs, vanilla, and sugar (excluding 1/8 cup) until combined.
  • Add cream cheese mixture evenly to the cupcake liners.
  • Bake for 25 minutes.
  • Beat heavy cream with remaining sugar for the whipped cream.
  • Pipe whipped cream using a petal tip on the cheesecakes once cooled.
